    Prepare the Duck

    Season the duck legs with salt, black peppercorns, and thyme. Place in a dish, cover, and refrigerate for at least 12 hours.

    Cook the Duck

    Preheat the oven to 300°F (150°C). Rinse the duck legs and pat dry. In a large oven-safe pot, melt the duck fat over low heat. Add the duck legs, garlic cloves, and thyme. Ensure the duck is completely submerged in the fat. Cover and cook in the oven for 2.5 to 3 hours until tender.

    Crisp the Duck

    Remove the duck from the fat and let cool. To crisp the skin, heat a skillet over medium heat and place the duck skin-side down until crispy, about 5 minutes.
