Pie Preparation

    Prepare the Filling

    In a large mixing bowl, combine the blueberries, sugar, cornstarch, lemon juice, and cinnamon. Stir gently until the blueberries are evenly coated. Let the mixture sit for 10 minutes to allow the juices to release.

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Assemble the Pie

    Place the pie crust in a 9-inch pie dish. Pour the blueberry filling into the crust and dot with butter. Cover with another layer of pie crust or create a lattice top. Seal the edges and cut vents if using a full crust.

    Egg Wash

    Beat the egg in a small bowl and brush it over the top crust to give it a golden color.

    Bake

    Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

    Cool

    Remove the pie from the oven and let it cool at room temperature for at least 1 hour before serving.

    Slice the pie and serve with your choice of cordial.
