For the Crisp Asparagus and Pork Rillettes
Method
Instructions
- 1
Prepare the Asparagus
Preheat your oven to 400°F (200°C). Rinse the asparagus and trim the tough ends. Place the asparagus on a baking sheet.
- 2
Season the Asparagus
Drizzle the olive oil over the asparagus, then sprinkle with sea salt, black pepper, and lemon zest. Toss to coat evenly.
- 3
Roast the Asparagus
Roast the asparagus in the preheated oven for about 15-20 minutes, or until they are tender and slightly crispy.
- 4
Prepare the Fouée
While the asparagus is roasting, warm the fouée in the oven for the last 5 minutes of the asparagus cooking time, just until they are warm and slightly toasted.
- 5
Assemble the Dish
Remove the asparagus and fouée from the oven. Spread a generous amount of pork rillettes inside each piece of fouée and top with several asparagus spears.
- 6
Garnish and Serve
Sprinkle the assembled dish with fresh parsley and serve immediately as an apéro.
