Cheesecake Preparation

Prepare the crust

In a bowl, combine graham cracker crumbs and melted butter. Mix well until the crumbs are fully coated. Press the mixture into the bottom of a springform pan to form an even layer. Set aside.

Make the cheesecake filling

In a large mixing bowl, combine the brocciu cheese, cream cheese, sugar, and a pinch of salt. Beat until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine with honey and flavor

Fold in the chestnut honey and chinotto into the cheese mixture until well incorporated.

Bake the cheesecake

Pour the cheesecake filling over the prepared crust in the springform pan. Bake in a preheated oven at 180°C (350°F) for about 45-50 minutes, or until the center is set but still slightly jiggly.

Cool and refrigerate

Once baked, turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour to cool gradually. Remove from the oven and refrigerate for at least 4 hours or overnight.

Serve

Once chilled, remove the cheesecake from the springform pan. Drizzle with extra chestnut honey and serve with a side of chinotto.
