    Prepare the Filling

    In a large skillet, melt the butter over medium heat. Add the shallots and garlic, and sauté until softened, about 3-4 minutes. Add the diced chicken and game bird meat, and cook until browned and cooked through, about 5-7 minutes. Stir in the thyme, salt, and black pepper. Remove from heat and let it cool.

    Assemble the Pithivier

    Preheat the oven to 200°C (400°F). Roll out one sheet of puff pastry on a floured surface. Place the cooled filling in the center of the pastry. Roll out the second pastry sheet and place it over the filling. Seal the edges by crimping them together. Cut a small hole in the center for steam to escape.

    Bake the Pithivier

    Brush the top of the pastry with the beaten egg. Bake in the preheated oven for 25-30 minutes, or until golden brown.

    Prepare the Salad

    While the pithivier is baking, prepare the lamb's lettuce salad. Rinse the lamb's lettuce and toss with a light vinaigrette of olive oil, vinegar, salt, and pepper.
