Prepare the Dough
In a large mixing bowl, combine the softened butter and grated Parmesan cheese. Beat until creamy.

Add Dry Ingredients
Add the flour, chopped rosemary, sea salt, and black pepper to the butter mixture. Mix until a sandy texture forms.

Incorporate Egg Yolk
Add the egg yolk and cold water to the mixture. Stir until the dough comes together.

Shape the Dough
Turn the dough onto a lightly floured surface. Shape it into a log, about 2 inches in diameter. Wrap it in plastic wrap and refrigerate for at least 1 hour.

Preheat Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Slice and Bake
Once chilled, unwrap the dough and slice it into 1/4 inch thick rounds. Place them on the prepared baking sheet and bake for 15-20 minutes or until lightly golden.

Cool and Serve
Remove from the oven and let the sablés cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
