Preparation Instructions

  1. 1

    Prepare the Dough

In a large mixing bowl, combine the all-purpose flour, grated Parmesan cheese, salt, and black pepper. Mix well.

  2. 2

    Incorporate Butter and Rosemary

Add the softened butter and chopped rosemary to the flour mixture. Use your hands or a pastry cutter to blend until the mixture resembles coarse crumbs.

  3. 3

    Add Egg Yolk

In a small bowl, whisk together the egg yolk and cold water. Pour this mixture into the flour mixture and stir until the dough comes together.

  4. 4

    Chill the Dough

Form the dough into a log shape, wrap it in plastic wrap, and refrigerate for at least 1 hour or until firm.

  5. 5

    Preheat Oven

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  6. 6

    Slice and Bake

Remove the dough from the refrigerator and slice it into 1/4 inch thick rounds. Place the rounds on the prepared baking sheet, spacing them about 1 inch apart.

  7. 7

    Bake

Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool on a wire rack.
