Prepare the Dough
In a large mixing bowl, combine the all-purpose flour, grated Parmesan cheese, salt, and black pepper. Mix well.

Incorporate Butter and Rosemary
Add the softened butter and chopped rosemary to the flour mixture. Use your hands or a pastry cutter to blend until the mixture resembles coarse crumbs.

In a small bowl, whisk together the egg yolk and cold water. Pour this mixture into the flour mixture and stir until the dough comes together.

Form the dough into a log shape, wrap it in plastic wrap, and refrigerate for at least 1 hour or until firm.
