Mix the Ingredients
In a mixing bowl, combine the softened butter, chopped Castelvetrano olives, minced garlic, chopped parsley, and lemon zest. Mix thoroughly until all ingredients are well incorporated.

Season the Butter
Taste the mixture and season with salt and black pepper to your liking, mixing well after each addition.

Shape the Butter
Transfer the olive butter mixture onto a piece of parchment paper or plastic wrap. Roll it into a log shape, twisting the ends to seal.

Place the wrapped butter in the refrigerator for at least 1 hour, or until firm.
