Caramelized Onion Roast Chicken

Method

Preparation and Cooking

1

Prepare the Chicken

Preheat the oven to 375°F (190°C). Pat the chicken dry with paper towels and season generously with salt and black pepper, both inside and out.

2

Caramelize the Onions

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the sliced onions and cook, stirring frequently, until they become golden brown and caramelized, about 20-25 minutes. Add minced garlic and fresh thyme in the last few minutes of cooking.

3

Roast the Chicken

Place the caramelized onions inside the cavity of the chicken. In a roasting pan, add the chicken broth. Place the chicken on top and roast in the preheated oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C). Baste the chicken with the broth every 30 minutes.

4

Make the Demi Glace

Once the chicken is done, remove it from the oven and let it rest for 10 minutes. Meanwhile, strain the remaining broth in the roasting pan into a saucepan. Simmer over medium heat until reduced by half to create a demi-glace.

5

Serve

Carve the chicken and serve with the demi-glace drizzled over the top, accompanied by pommes puree and carrots in carrot butter.
