Crème Caramel Preparation

1. Prepare the Custard

In a saucepan, combine the milk, heavy cream, sugar, and vanilla extract. Heat over medium heat until just simmering. In a bowl, whisk together the eggs and egg yolks. Gradually add the warm milk mixture to the eggs, whisking constantly. Strain through a fine sieve into a bowl.

2. Make the Caramel

In a saucepan, combine the sugar and water. Cook over medium heat until the sugar dissolves and turns amber in color. Quickly pour the caramel into the bottom of ramekins, tilting to coat.

3. Bake the Custard

Pour the custard mixture over the caramel in the ramekins. Place ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake at 325°F (160°C) for about 45-50 minutes, or until set. Let cool, then refrigerate for at least 4 hours or overnight.
