Method

Preparation

  1. 1

    Preheat the oven

Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.

  2. 2

    Mix dry ingredients

In a large bowl, whisk together the flour, baking powder, and salt until well combined.

  3. 3

    Combine wet ingredients

In another bowl, beat the eggs, then add the milk and olive oil. Mix until smooth.

  4. 4

    Combine mixtures

Pour the wet ingredients into the dry ingredients and fold gently until just combined.

  5. 5

    Add sun-dried tomatoes and olives

Fold in the sun-dried tomatoes, chopped olives, and grated cheese until evenly distributed.

  6. 6

    Bake the cake

Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. 7

    Cool and serve

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing. Serve warm or at room temperature.
