Cooking Instructions

  1. 1

    Prepare the Cod

Soak the salted cod in cold water for 24 hours, changing the water several times.

  2. 2

    Cook the Potatoes

Peel the potatoes and cut them into chunks. Boil in salted water until tender, about 15-20 minutes.

  3. 3

    Prepare the Garlic

In a small saucepan, combine the garlic cloves with the whole milk and heat gently until the garlic is soft.

  4. 4

    Combine Ingredients

Drain the cod and remove any skin and bones. In a mixing bowl, mash the potatoes. Stir in the cod, garlic mixture (including the milk), heavy cream, olive oil, and black pepper until well combined.

  5. 5

    Bake the Brandade

Transfer the mixture to an ovenproof dish and smooth the top. Bake in a preheated oven at 180°C (350°F) for about 30 minutes until golden on top.

  6. 6

    Garnish and Serve

Remove from the oven, drizzle with lemon juice, and sprinkle with fresh parsley before serving.
