Preparation

    Prepare the Couscous

    In a medium saucepan, bring 1 cup of water and 1 cup of milk to a boil. Once boiling, remove from heat and stir in 1 cup of couscous. Cover and let it sit for about 5 minutes, or until the couscous is fluffy.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.

    Add Remaining Vegetables

    Stir in the diced carrot and zucchini, and cook for about 5 minutes until they are tender.

    Mix in Chickpeas and Spices

    Add the drained chickpeas, ground cumin, ground cinnamon, salt, and black pepper to the skillet. Cook for an additional 3-4 minutes, stirring occasionally.

    Combine Couscous with Vegetables

    Fluff the couscous with a fork and then add it to the skillet with the vegetable and chickpea mixture. Stir to combine thoroughly.

    Garnish and Serve

    Remove from heat and stir in the chopped fresh parsley. Serve warm.
