    Prepare the Baguette

    Slice the baguette into 1-inch thick slices and lightly toast them in a skillet or oven until golden brown.

    Cook the Chorizo

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the chorizo slices and cook until they are browned and crispy, about 5-7 minutes. Remove from heat.

    Prepare the Anchovies

    If using preserved anchovies, rinse them under cold water to remove excess salt. Pat dry with paper towels.

    Assemble the Pintxos

    On each toasted baguette slice, layer a piece of chorizo, a slice of Manchego cheese, a piquillo pepper, and an olive. Secure with a toothpick.

    Garnish

    Finely chop the fresh parsley and mix it with minced garlic, olive oil, salt, and black pepper. Drizzle this mixture over the assembled pintxos.

    Serve

    Arrange the pintxos on a serving platter and serve with extra olives and a glass of your favorite cocktail.
