Prepare the Dough
In a large bowl, mix the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy. Add the flour and salt, mixing until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place until doubled in size, about 1-2 hours.

Shape the Baguettes
Once the dough has risen, punch it down and divide it into two equal pieces. Shape each piece into a long baguette, about 14 inches long. Place them on a baking sheet lined with parchment paper.

Second Rise
Cover the shaped baguettes with a cloth and let them rise for another 30-45 minutes until puffy.

Preheat the Oven
Preheat your oven to 450°F (230°C). Place a shallow pan of water on the bottom rack to create steam.

Bake the Baguettes
Make shallow slashes on the top of each baguette with a sharp knife. Bake in the preheated oven for 20-25 minutes until golden brown and hollow-sounding when tapped.

Prepare the Whipped Butter
While the baguettes are baking, whip the softened unsalted butter and rendered beef fat together until creamy and well combined. Season with sel de chateau to taste.

Serve
Once the baguettes are baked, let them cool slightly. Slice and serve with the whipped beef fat butter.
