Make the Dough
In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Form into a ball and place in a greased bowl. Cover with a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size.

Assemble the Flatbread
Preheat your oven to 475°F (245°C). Roll out the risen dough on a floured surface to a rectangular shape. Transfer to a baking sheet lined with parchment paper. Spread the heavy cream over the dough, then sprinkle with the caramelized onions, lardons, and gruyère cheese. Season with black pepper.

Bake in the preheated oven for about 15-20 minutes or until the flatbread is golden brown and the cheese is bubbly.

Remove from the oven, let cool slightly, then slice and serve warm.
