Method
Cooking Instructions
- 1
Cook the Rigatoni
In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and set aside.
- 2
Prepare the Sauce
In a large skillet over medium heat, heat the olive oil. Add minced garlic and sauté until fragrant, about 1-2 minutes. Stir in the Calabrian chili paste and cook for another minute.
- 3
Add Vodka and Cream
Carefully add the vodka to the skillet, allowing it to cook off for about 2 minutes. Then, lower the heat and slowly stir in the heavy cream, mixing well.
- 4
Combine Pasta and Sauce
Add the cooked rigatoni to the skillet, tossing to coat the pasta evenly in the sauce. Stir in the grated Parmesan cheese, salt, and black pepper. Cook for an additional 2-3 minutes until heated through.
- 5
Serve
Serve the spicy rigatoni in bowls, garnished with fresh basil and additional Parmesan cheese if desired. For a protein option, add cooked chicken or salmon as per preference.
