Marinate the Chicken
In a large bowl, combine the chicken thighs, jerk seasoning, soy sauce, minced garlic, and grated ginger. Mix well to coat the chicken thoroughly. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Coating
In a separate bowl, mix together the cornstarch, all-purpose flour, baking powder, salt, and black pepper.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken
Remove the marinated chicken from the refrigerator. Take each piece of chicken and dredge it in the flour mixture, ensuring it is well-coated.

Fry the Chicken
Carefully place the coated chicken pieces into the hot oil. Fry in batches for about 4-5 minutes or until golden brown and crispy. Make sure not to overcrowd the pan.

Once cooked, remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
