Method

Cooking Pork Belly

Preparation

Preheat oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern.

Seasoning

Rub salt and black pepper all over the pork belly. Place garlic and ginger in the bottom of a roasting pan.

Braising

Put the pork belly on top of the garlic and ginger. In a bowl, mix soy sauce, water, and brown sugar. Pour over the pork belly.

Slow Cooking

Cover the pan with foil and braise in the oven for 2-3 hours until tender.

Resting

Remove from oven and let rest for 15 minutes before slicing.

Making Special Sauce

Combine Ingredients

In a bowl, whisk together mayonnaise, soy sauce, sriracha, and lime juice until smooth.

Pickling Veg

Pickling Mixture

In a pot, combine rice vinegar, sugar, and salt. Heat until sugar dissolves.

Pickling Process

Add sliced carrots and cucumbers to the mixture and let them sit for at least 30 minutes.

Serving

Plating

Slice the pork belly and serve it with pickled vegetables, a drizzle of special sauce, and garnish with sliced jalapeno.
