Prepare the Jam
In a medium saucepan, combine the fresh strawberries, rhubarb, and sugar. Cook over medium heat, stirring frequently until the fruits break down and the mixture thickens, about 15-20 minutes.

Basil Syrup

Make the Basil Syrup
In a small saucepan, combine water and sugar. Bring to a boil over medium heat, stirring until the sugar dissolves. Add the fresh basil leaves and simmer for 5 minutes.

Strain the Syrup
Remove from heat and let it cool. Strain the syrup through a fine-mesh sieve into a clean jar, discarding the basil leaves. Refrigerate until ready to use.

Mix the Spritzer
In a glass, combine 1 tablespoon of the housemade strawberry rhubarb jam, 1 tablespoon of fresh lemon juice, and 1 tablespoon of basil syrup.

Add Soda Water
Fill the glass with ice cubes and top with soda water. Stir gently to combine.

Garnish with fresh basil leaves before serving.
