Dough Preparation

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour and salt.

Add Oil
Add the oil to the flour mixture and rub it between your palms until the mixture resembles breadcrumbs.

Knead the Dough
Gradually add water and knead the mixture into a smooth, firm dough. Cover with a damp cloth and let it rest for about 30 minutes.

Cook Onions
In a pan, heat a tablespoon of oil over medium heat. Add the chopped onions and sauté until they turn golden brown.

Mix in Spices and Peas
Add the cumin seeds, green chili, turmeric powder, coriander powder, and garam masala. Stir for a minute, then add the green peas. Cook for another 2-3 minutes.

Samosa Assembly

Divide the Dough
Divide the rested dough into small balls, about the size of a golf ball.

Roll Out Dough
On a floured surface, roll each ball into a thin oval or circle about 6 inches in diameter.

Shape the Samosa
Cut the rolled dough in half to form two semi-circles. Take one semi-circle, fold it into a cone shape, sealing the edge with a little water. Fill the cone with the potato filling and seal the top edge with water.

Heat Oil
In a deep frying pan, heat the oil over medium heat until hot.

Fry Samosas
Carefully slide the prepared samosas into the hot oil, frying in batches until they are golden brown and crispy. Remove and drain on paper towels.
