    Prepare the Ingredients

    Dice the lamb shoulder into bite-sized pieces. Finely chop the onions, mince the garlic and ginger, and chop the tomatoes.

    Sauté Onions and Spices

    In a large pot, heat 2 tablespoons of oil over medium heat. Add the chopped onions and sauté until golden brown, about 5-7 minutes. Stir in the minced garlic and ginger, and sauté for another 2 minutes.

    Add curry powder, cumin seeds, turmeric powder, red chili powder, salt, and black pepper to the onion mixture. Stir well and cook for 2-3 minutes until fragrant.

    Brown the Lamb

    Add the diced lamb to the pot and cook until browned on all sides, about 5-10 minutes.

    Add Tomatoes and Coconut Milk

    Stir in the chopped tomatoes and cook for 2-3 minutes until softened. Then, pour in the coconut milk, stirring to combine.

    Simmer the Curry

    Bring the mixture to a gentle simmer. Reduce the heat to low, cover the pot, and let it cook for 1.5 to 2 hours, or until the lamb is tender, stirring occasionally.

Serving

    Once the lamb is tender, remove from heat. Garnish with freshly chopped coriander. Serve hot with rice or naan.
