Prepare the batter

    Mix dry ingredients

    In a large bowl, combine chickpea flour, rice flour, turmeric powder, red chili powder, cumin seeds, salt, and baking soda. Mix well until all dry ingredients are combined.

    Add water

    Gradually add water to the dry mixture while stirring to form a smooth, thick batter. Ensure there are no lumps.

Prepare the vegetables

    Chop vegetables

    Thinly slice the potatoes and onion. Chop spinach leaves and cauliflower into small florets. Finely chop green chilies.

Combine ingredients

    Mix vegetables with batter

    Add the sliced potatoes, onion, chopped spinach, cauliflower, and green chilies to the batter. Stir well to coat the vegetables evenly with the batter.

Fry the pakoras

    Heat oil

    In a deep frying pan or kadhai, heat the vegetable oil over medium heat until it reaches around 350°F (175°C).

    Fry the pakoras

    Using a spoon, drop small portions of the vegetable-batter mixture into the hot oil. Fry in batches, making sure not to overcrowd the pan.

    Cook until golden brown

    Fry the pakoras for about 4-5 minutes or until they are golden brown and crispy. Turn occasionally for even cooking.

    Drain excess oil

    Once cooked, remove the pakoras from the oil and place them on a paper towel-lined plate to drain excess oil.

Serve

    Serve the pakoras hot with mint chutney or tamarind sauce for dipping.
