    Prepare the Lamb

    Cut the lamb shoulder into 1.5-inch cubes and set aside.

    Chop Vegetables

    Finely chop the onions, mince the garlic, and grate the ginger.

    Prepare Spices

    In a small bowl, combine ground coriander, ground cumin, turmeric, garam masala, and red chili powder.

Cooking

    Sauté Onions

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown, about 10 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and grated ginger. Cook for an additional 2 minutes until fragrant.

    Incorporate Spices

    Add the spice mixture to the pot, stirring well to coat the onions, garlic, and ginger. Cook for 2-3 minutes until the spices are aromatic.

    Add Lamb

    Add the cubed lamb to the pot. Stir well to coat the meat with the spice mixture. Cook for about 5-7 minutes until the lamb is browned on all sides.

    Add Tomatoes and Water

    Stir in the pureed tomatoes and water. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally, until the lamb is tender.

    Once the lamb is tender, season with salt to taste. Remove from heat and garnish with chopped cilantro before serving.
