Marinate the Pork
Make several deep cuts into the pork shoulder. Rub the marinade all over the pork, making sure to get some into the cuts. Place the pork in a large zip-top bag or a covered dish and refrigerate for at least 12 hours, preferably overnight.

Prepare for Roasting
Preheat the oven to 300°F (150°C). Remove the pork from the refrigerator and let it come to room temperature for about 30 minutes.

Roast the Pork
Place the marinated pork in a roasting pan. Scatter the sliced onion and bay leaves around the pork. Cover the pan with aluminum foil and roast for about 4-5 hours, or until the pork is tender and easily pulls apart with a fork.

Crisp the Skin
Remove the foil and increase the oven temperature to 450°F (230°C). Roast for an additional 30-45 minutes, or until the skin is crispy and golden brown.

Let the pork rest for about 15 minutes before slicing. Serve with your choice of sides.
