    Make the Crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove and set aside to cool.

    Prepare the Cheesecake Filling

    In a large bowl, beat the softened cream cheese until smooth. Add the sugar, sour cream, and vanilla extract, and mix until well combined. Add the eggs one at a time, mixing well after each addition.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

    Make the Tropical Glaze

    In a small saucepan, combine passion fruit puree, mango puree, sugar, cornstarch, and water. Cook over medium heat, stirring constantly until the mixture thickens. Remove from heat and let cool slightly.

    Assemble

    Once the cheesecake has cooled completely, pour the tropical glaze over the top. Spread it evenly and refrigerate for at least 4 hours or overnight before serving.
