    Prepare the Caramel

    In a medium saucepan, combine the granulated sugar and water. Heat over medium heat until the sugar dissolves, then increase the heat and bring to a boil. Do not stir. Allow it to boil until the mixture turns a deep amber color, about 8-10 minutes. Remove from heat immediately and carefully pour into a round flan mold, tilting to coat the bottom evenly. Set aside to cool.

    Prepare the Custard

    In a large mixing bowl, whisk together the eggs, sweetened condensed milk, evaporated milk, and vanilla extract until smooth and well combined.

    Combine and Bake

    Preheat the oven to 350°F (175°C). Pour the custard mixture over the cooled caramel in the flan mold. Place the mold in a larger baking dish and fill the dish with hot water until it reaches halfway up the sides of the flan mold. Bake for about 50-60 minutes, or until a knife inserted in the center comes out clean.

    Cool and Serve

    Remove the flan from the water bath and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges of the flan, invert onto a serving platter, and enjoy!
