    Prepare the Veal

    Preheat your oven to 400°F (200°C). Season the veal cutlets with salt and black pepper. Dredge each cutlet in flour, shaking off the excess, then dip in beaten eggs, and finally coat with breadcrumbs.

    Fry the Cutlets

    In a large skillet, heat the olive oil over medium heat. Fry the breaded veal cutlets for about 3-4 minutes on each side, or until golden brown. Remove them from the skillet and place on a paper towel-lined plate to drain excess oil.

    Assemble the Dish

    In a baking dish, spread a thin layer of marinara sauce. Place the fried veal cutlets on top of the sauce. Spoon more marinara sauce over each cutlet, then sprinkle with mozzarella and Parmesan cheese.

    Bake

    Bake the veal in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.

    Cook the Linguini

    While the veal is baking, cook the linguini according to package instructions. Drain and set aside.

    Serve the veal parmigiana over a bed of linguini, garnished with fresh basil.
