1. Prepare the Foam

In a cocktail shaker, combine the egg white and St. Germain liqueur. Dry shake (no ice) vigorously for about 10 seconds to create a foam.

2. Mix the Cocktail

In another shaker filled with ice, combine Espolon Tequila, Montelobos Mezcal, Burlesque Bitters, Agave Nectar, and Pomegranate Juice. Shake well until chilled.

3. Combine and Serve

Strain the cocktail mixture into a chilled glass, then carefully spoon the St. Germain foam on top. Garnish with a pomegranate seed or a twist of citrus peel if desired.
