Prepare the Veal
Pound the veal cutlets to about 1/4 inch thickness. Season both sides with salt and black pepper.

Set Up Breading Station
In three separate shallow dishes, place the flour in the first, beaten eggs in the second, and Italian bread crumbs mixed with Parmesan cheese in the third.

Bread the Veal
Dredge each veal cutlet in flour, shaking off the excess. Dip into the beaten eggs, then coat with the bread crumb mixture.

Fry the Veal
In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully place the breaded veal cutlets in the skillet and cook for about 3-4 minutes on each side or until golden brown. Remove and let drain on paper towels.

Cook the Angel Hair Pasta
In a pot of boiling salted water, add the angel hair pasta and cook according to package instructions until al dente. Drain and set aside.

Serve
Plate the angel hair pasta and top with the fried veal cutlets. Drizzle with beurre blanc sauce and garnish with additional Parmesan cheese if desired.
