    Prepare the Chicken

    Preheat the oven to 375°F (190°C). Take each chicken breast and place a slice of prosciutto and 2 sage leaves on top. Secure with a toothpick if necessary.

    Sear the Chicken

    In a skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown. Remove and set aside.

    Cook the Mushrooms

    In the same skillet, add sliced mushrooms and garlic. Sauté for about 3-4 minutes until mushrooms are tender. Season with salt and pepper.

    Make the Beurre Blanc

    In a small saucepan, combine white wine and reduce by half over medium heat. Stir in butter until melted and the sauce is smooth. Season to taste.

    Bake the Chicken

    Place the seared chicken breasts in an oven-safe dish. Top with sautéed mushrooms and shredded mozzarella. Bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly.

    Cook the Pasta

    While the chicken is baking, cook the angel hair pasta according to the package instructions. Drain and set aside.

    On a plate, place a serving of angel hair pasta, top with the chicken saltimbocca, and drizzle with beurre blanc sauce.
