Cooking Directions
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper. Dredge each piece in flour, dip into beaten eggs, and then coat with breadcrumbs.
- 2
Fry the Chicken
In a large skillet, heat olive oil over medium heat. Fry the breaded chicken breasts until golden brown on both sides, about 4-5 minutes per side. Remove and place on paper towels to drain excess oil.
- 3
Assemble the Dish
In a baking dish, spread a thin layer of red sauce on the bottom. Place the fried chicken breasts on top. Cover each breast with more red sauce, then sprinkle mozzarella and parmesan cheese over the top.
- 4
Bake
Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
- 5
Cook the Linguini
While the chicken is baking, cook the linguini pasta according to package instructions until al dente. Drain and set aside.
- 6
Serve
Serve the chicken parmigiana on a plate with a side of linguini topped with remaining red sauce. Garnish with fresh basil.
