1. Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.
2. Sauté the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
3. Cook the Mushrooms
In the same skillet, add the sliced mushrooms and sauté for about 5 minutes until they are browned. Add the minced garlic and cook for an additional 1 minute.
4. Make the Sauce
Pour in the Marsala wine and let it simmer for about 2-3 minutes, scraping the bottom of the skillet to release any browned bits. Add the chicken broth and continue to simmer until the sauce reduces by half.
5. Finish the Dish
Return the chicken to the skillet, add butter, and cook for an additional 2-3 minutes, allowing the chicken to soak up the sauce. Sprinkle with chopped parsley.
6. Cook the Pasta
In a separate pot, cook the angel hair pasta according to package instructions. Drain and serve alongside or under the chicken marsala.
