Roasting the Tomatoes
Preheat the oven to 400°F (200°C). Place the cherry tomatoes on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt and pepper. Roast in the oven for 15-20 minutes or until they are blistered and soft.

Cooking the Fish
In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Season the Gulf fish fillets with salt and black pepper. Cook the fish for about 3-4 minutes on each side, or until golden brown and cooked through. Add the sliced mushrooms in the last 2 minutes of cooking to sauté with the fish.

Plating
On a plate, place the sautéed Gulf fish, top with roasted tomatoes, and garnish with fresh basil leaves. Drizzle the beurre blanc sauce over the dish before serving.
