    Prepare the Veal

    Season the veal shanks with salt and black pepper.

    Sear the Shanks

    In a large pot, heat olive oil over medium-high heat. Add the veal shanks and sear until browned on all sides, about 5 minutes per side. Remove from the pot and set aside.

    Cook the Vegetables

    In the same pot, add chopped carrots, onion, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.

    Deglaze with Wine

    Pour in the white wine and scrape the bottom of the pot to remove any brown bits. Let it simmer for about 2 minutes.

    Add Broth and Herbs

    Return the veal shanks to the pot. Add beef broth and fresh thyme. Bring to a gentle simmer.

    Slow Cook

    Cover the pot and let cook on low heat for about 2 hours, until the veal is tender.

    Cook the Pasta

    In a separate pot, cook the angel hair pasta according to package instructions. Drain and set aside.

    Serve the veal osso bucco over a bed of angel hair pasta, garnished with grated Parmesan cheese.
