Cooking Directions

  1. 1

    Prepare the Sauce

In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add San Marzano tomatoes, red pepper flakes, salt, and black pepper. Simmer for 15-20 minutes, stirring occasionally, until sauce thickens. Remove from heat and let cool slightly.

  2. 2

    Prepare the Pizza

Preheat your oven to 475°F (245°C). Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a pizza stone or baking sheet.

  3. 3

    Assemble the Pizza

Spread the prepared spicy tomato sauce over the dough, leaving a small border around the edges. Dollop mascarpone cheese evenly over the sauce and sprinkle grated Parmesan cheese on top.

  4. 4

    Bake the Pizza

Bake in the preheated oven for 12-15 minutes or until the crust is golden brown and the cheese is melted and bubbly.

  5. 5

    Add Arugula

Remove the pizza from the oven and top with fresh wild arugula. Drizzle with olive oil and additional salt if desired. Slice and serve hot.
