1. Cook the Pasta
Bring a large pot of salted water to a rolling boil. Add the radiatore pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta.
2. Prepare the Cheese Mixture
In a bowl, combine the grated Parmesan and Pecorino Romano cheeses. Mix well and set aside.
3. Combine Pasta and Cheese
In a large skillet over medium heat, add the olive oil and freshly cracked black pepper. Toast the pepper for about 30 seconds to release its flavor. Add the drained pasta to the skillet, tossing to coat in the oil and pepper.
4. Add Cheese and Pasta Water
Remove the skillet from heat and add the cheese mixture to the pasta. Gradually add reserved pasta water, a little at a time, while tossing the pasta to create a creamy sauce. Adjust with more pasta water as needed to reach desired consistency.
5. Serve
Taste and season with salt if needed. Serve immediately, garnished with additional cheese and freshly cracked black pepper on top.
