Prepare the Pork
Begin by laying the pork loin chops flat. Top each chop with 2 slices of prosciutto and 3 sage leaves. Secure the prosciutto and sage to the pork with toothpicks or kitchen twine.

Sear the Pork
In a large skillet, heat olive oil over medium-high heat. Add the pork chops, cooking for about 3-4 minutes on each side until they are golden brown. Remove from skillet and set aside.

Make the Marsala Jus
In the same skillet, add the Marsala wine and capers. Bring to a simmer, scraping up any browned bits from the bottom of the pan. Reduce the sauce by half, then stir in butter until melted and smooth.

Cook the Polenta
In a saucepan, bring 4 cups of water to a boil. Slowly whisk in 1 cup of polenta and stir continuously for about 5-7 minutes until thickened. Season with salt and black pepper.

Grill the Broccolini
While the polenta is cooking, grill broccolini over medium heat until tender and slightly charred, about 5-7 minutes.

To serve, place a portion of polenta on each plate, top with a pork chop, drizzle with Marsala jus, and add a side of grilled broccolini.
