    Cook the Pappardelle

    In a large pot of boiling salted water, cook the pappardelle pasta according to package instructions until al dente. Drain and reserve 1 cup of pasta water.

    Prepare the Ragu

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional 1 minute.

    Brown the Sausage

    Add the spicy pork sausage to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 7-10 minutes.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes and red pepper flakes. Simmer for about 15 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.

    Combine Pasta and Sauce

    Add the cooked pappardelle to the ragu, tossing to combine. If the sauce is too thick, add some reserved pasta water to reach desired consistency.

    Serve

    Remove from heat and stir in the torn basil leaves. Serve topped with grated Parmesan cheese.
