    Prepare the Ingredients

    Preheat your oven to 475°F (245°C). Cook the applewood smoked bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels. Reserve some bacon fat in the skillet.

    Sauté the Collard Greens

    In the same skillet with the reserved bacon fat, add the braised collard greens. Sauté for about 5 minutes until heated through. Season with salt and pepper. Remove from heat.

    Roll Out the Dough

    On a floured surface, roll out the pizza dough into a round shape, about 12 inches in diameter. Transfer it to a pizza stone or baking sheet lined with parchment paper.

    Assemble the Pizza

    Spread the sautéed collard greens evenly over the dough. Sprinkle the crumbled bacon on top, followed by the grated Gruyere cheese.

    Add the Eggs

    Create 4 small wells in the toppings and crack an egg into each well. Drizzle with olive oil and season with additional salt and pepper.

    Bake the Pizza

    Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the eggs are set to your liking.
