Prepare the Broth
In a saucepan, heat the vegetable broth over medium heat. Keep it warm but not boiling.

Caramelize the Onions
In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until golden brown and caramelized, about 10-15 minutes. Add minced garlic and cook for an additional 1-2 minutes.

Cook the Risotto
Add the Arborio rice to the skillet with the onions and garlic. Stir for about 2 minutes until the rice is well-coated and slightly toasted. Gradually add the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more.

Add Tomatoes and Spinach
When the rice is almost al dente (about 15-20 minutes), stir in the diced tomatoes and chopped spinach. Continue to cook, adding more broth as needed, until the rice is creamy and cooked through.

Finish with Cheese and Basil
Remove the skillet from heat, and fold in the crumbled goat cheese and fresh basil. Season with salt and black pepper to taste. Let it sit for a couple of minutes before serving.
