Prepare the Grits
In a saucepan, bring chicken broth to a boil. Gradually whisk in grits, reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until thickened. Stir in parmesan cheese and season with salt and pepper.

Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving the rendered fat in the skillet.

Sauté the Vegetables
In the same skillet, add olive oil if needed, and sauté chopped bell peppers, green onions, and mushrooms until soft, about 5-7 minutes.

Cook the Shrimp
Add the shrimp to the skillet and cook for 3-4 minutes until pink and opaque. Season with salt and pepper.

Make the Cream Sauce
Stir in the heavy cream and bring to a simmer, allowing it to thicken slightly. Adjust seasoning as needed.

Serve
Place a serving of grits on a plate, top with the shrimp and vegetable mixture, drizzle with mushroom cream sauce, and add a spoonful of tomato jam on the side. Garnish with additional green onions.
