House Smoked Brisket Recipe

Preparation and Cooking

    Prepare the Brisket

    In a small bowl, mix together smoked paprika, brown sugar, garlic powder, onion powder, salt, black pepper, Worcestershire sauce, and liquid smoke. Rub this mixture all over the brisket. Wrap the brisket in plastic wrap and refrigerate for at least 12 hours, preferably overnight.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Remove the brisket from the refrigerator and place it in the smoker. Smoke the brisket for 1 hour per pound, or until it reaches an internal temperature of 195°F (90°C). This will take approximately 4-6 hours.

    Fry the Pickles

    While the brisket is smoking, heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Slice pickles into chips and fry them until golden brown, about 3-4 minutes. Drain on paper towels and set aside.

    Make BBQ Mayo

    In a bowl, mix mayonnaise with BBQ sauce until smooth. Adjust seasoning to taste.

    Assemble the Sandwich

    Once the brisket is done, let it rest for 15-20 minutes before slicing it thinly. Toast the buns if desired. Spread BBQ mayo on the bottom half of each bun, add sliced brisket, and top with fried pickles. Place the top half of the bun on and serve.
