Burger Patty

Prep the Tuna
Finely chop the line caught bluefin tuna and place it in a mixing bowl.

Season the Mixture
Add sea salt, black pepper, olive oil, chopped green onions, and soy sauce to the bowl. Mix until well combined.

Form Patties
Divide the mixture into equal portions and shape them into burger patties. Refrigerate for about 30 minutes.
Slaw

Prepare the Slaw
In a separate bowl, combine shredded cabbage and daikon radish.

Dress the Slaw
In a small bowl, mix rice vinegar, sugar, and salt. Pour the mixture over the cabbage and daikon, then toss to combine. Set aside for at least 15 minutes.
Nasturtium Aioli

Make the Aioli
In a small mixing bowl, combine mayonnaise, finely chopped nasturtium leaves, lemon juice, and minced garlic. Stir until smooth and well combined.

Fry the Chips
Heat olive oil in a deep frying pan over medium-high heat. Fry the potato slices in batches until golden and crispy, about 3-4 minutes per batch.

Season the Chips
Remove chips from oil and drain on paper towels. While still hot, sprinkle with sea salt.

Assemble the Burger
On a serving plate, place a tuna burger patty, top with the slaw, and drizzle with nasturtium aioli. Serve alongside potato chips.
