Harvesting Grapes

Begin by harvesting ripe Alvarinho, Loureiro, and Malvasia Fina grapes. Ensure that the grapes are free from any rot or blemishes.

Crushing Grapes

Once harvested, crush the grapes gently to release their juices. This can be done by hand or using a grape crusher.

Fermentation Process

Transfer the crushed grapes into a fermentation vessel. Add the yeast to the grape juice and mix gently. Ensure the temperature is kept between 18-22 degrees Celsius.

Adding Ingredients

After a few days of fermentation, add the sugar, acid blend, and sulfites to the mixture. Stir gently to ensure even distribution.

Secondary Fermentation

Allow the wine to ferment for an additional 2-4 weeks until fermentation is complete. Monitor the specific gravity to ensure it has stabilized.

Racking the Wine

Once fermentation is complete, siphon the wine off the sediment into a clean container. This process is known as racking.

Bottling

Bottle the wine using sterilized bottles and corks. Ensure each bottle is sealed properly to prevent oxidation.

Aging

Store the bottles in a cool, dark place for at least 3-6 months to allow the wine to mature and develop its flavors.

After aging, chill the Vinho Verde before serving. It is best enjoyed young, with light dishes or seafood.
