    Prepare the Black Garlic Aioli

    In a small bowl, mash the black garlic cloves into a paste. Add the egg yolk and Dijon mustard, whisking until combined. Gradually drizzle in olive oil while whisking continuously until the mixture is emulsified and thick. Season with salt and pepper to taste. Set aside.

    Prepare the Beef

    Using a sharp knife, finely chop the beef tenderloin into small cubes. Transfer to a mixing bowl.

    Add Flavorings

    Finely chop the shallot and parsley. Add the chopped shallot, parsley, Worcestershire sauce, salt, and black pepper to the bowl with the chopped beef. Mix gently until just combined.

    Plate the Tartare

    Using a ring mold, portion the beef mixture onto a serving plate. Make a small indentation in the center of the tartare and place the prepared black garlic aioli on top.

    Serve with Potato Chips

    Arrange potato chips around the steak tartare on the plate for serving. Enjoy immediately.
