Malt Preparation

Milling the Malt
Milled the pale and crystal malts together to achieve the desired consistency, which should be coarse but not too fine.
Mashing

Mash the Grains
In a large mash tun, combine the milled malt with 5 gallons of filtered water. Heat the water to about 165°F (74°C) before adding the grains. Maintain the mash temperature at around 152°F (67°C) for 60 minutes.
Boiling

Boil the Wort
After mashing, sparge the grains and collect the wort. Bring the wort to a boil and add Cascade hops at the beginning of the boil (60 minutes). Add Centennial hops with 15 minutes left in the boil.
Cooling

Cool the Wort
Once the boiling is complete, cool the wort rapidly using a wort chiller or an ice bath until it reaches approximately 70°F (21°C).
Fermentation

Pitch the Yeast
Transfer the cooled wort to a sanitized fermenter. Sprinkle the packet of American Ale yeast on top of the wort and seal the fermenter with an airlock.

Prepare for Bottling
After fermentation is complete (usually 1-2 weeks), dissolve the priming sugar in a small amount of boiling water. Add this solution to the bottling bucket, then siphon the beer into the bucket and mix gently.
