Preparation and Cooking

    Prepare the Oysters

    Preheat your oven to 450°F (232°C). Carefully shuck the oysters, keeping them on their half shells. Place them on a baking sheet.

    Prepare the Topping

    In a small pan, melt the pork fat over medium heat. Once melted, add the chopped kimchi and sauté for about 3-4 minutes until heated through and fragrant.

    Add Seasoning

    Finely chop the scallions, separating the green tops from the white bottoms. Add the white parts to the kimchi mixture along with salt and black pepper to taste. Mix well.

    Assemble the Oysters

    Spoon a small amount of the kimchi mixture over each oyster on the baking sheet. Top each oyster with a little more pork fat if desired.

    Roast the Oysters

    Place the baking sheet in the preheated oven and roast the oysters for about 8-10 minutes, or until the edges of the oysters start to curl and the topping is bubbly.

    Garnish and Serve

    Remove the oysters from the oven and let them cool slightly. Garnish with the green parts of the scallions and serve immediately with lemon wedges on the side.
