    Prepare the Ingredients

    Peel and chop the parsnips into small chunks. Dice the onion and mince the garlic.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Parsnips

    Add the chopped parsnips to the pot and stir to combine with the onion and garlic. Cook for another 5 minutes.

    Add Broth and Seasoning

    Pour in the vegetable broth, and add salt and black pepper. Bring the mixture to a boil, then reduce to a simmer. Cover the pot and let it cook for about 20 minutes or until the parsnips are tender.

    Blend the Soup

    Once the parsnips are cooked, use an immersion blender to blend the soup until smooth. Alternatively, you can carefully transfer it to a blender in batches.

    Stir in the Apple Koji Milk

    Return the blended soup to the pot (if you used a blender) and stir in the apple koji milk. Heat over low heat until warmed through.

    Prepare Tahini

    In a small bowl, mix the tahini with a little water to thin it out, creating a drizzle consistency.

    Serve the Soup

    Ladle the parsnip soup into bowls, drizzle with the caramelized tahini, and garnish with torn nori sheets.
