    Prepare the Oysters

    Preheat your oven to 400°F (200°C). Carefully shuck the fresh oysters and place them on a baking sheet, keeping them in their half shells.

    Cook the Spinach

    In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 3-5 minutes). Stir in the chopped spinach and cook until wilted. Season with salt and black pepper.

    Make the Creamed Spinach Mixture

    Remove the skillet from heat and stir in the sour cream and lemon juice until well combined. Fold in half of the grated Parmesan cheese, mixing until the cheese is melted and incorporated.

    Prepare the Topping

    In a separate bowl, mix the sourdough breadcrumbs, remaining Parmesan cheese, and Mystic Cheese Co. rinds together. This will be your topping for the oysters.

    Assemble the Oysters

    Spoon the creamed spinach mixture generously over each oyster in its shell. Top each filled oyster with the breadcrumb mixture, ensuring they are well covered.

    Bake the Oysters

    Place the baking sheet with the prepared oysters in the preheated oven. Bake for 10-12 minutes, or until the topping is golden brown and crispy.

    Serve

    Remove from the oven and allow to cool for a minute. Serve the Oysters Rockefeller warm, garnished with additional lemon wedges if desired.
